Yummy Mushroom & Nectarine Loaded Tacos

These easy tacos are a series of delicious oxymorons: savory and sweet, hot and cold, crunchy and silky - but 100% delectable. Customize them on taco night for the whole family!


These tacos are delicious in a nice crunchy shell - we used blue corn - but would also be great in soft shells or with the filling and toppings added on top of rice or another grain for a taco bowl! See the bottom of this post for a fun little bonus: make-your-own-taco-holders!

The prep for this recipe is super simple - one cutting board and a sharp knife will get you far, basically chopping one thing at a time, adding to the skillet, and then chopping the next item while that cooks - lather, rinse, repeat.


Finely chop the onion first and transfer to a skillet with oil to saute until translucent. Then add in the finely chopped mushrooms (wash them well first, so you avoid any unwanted dirt) and add to the onions, cooking until liquid has gone and the mushrooms begin to brown. Segment the nectarine thinly and add to the pan to caramelize and cook down, adding sweetness to the mushrooms. While that cooks down, chop the avocado and tomato for addition to the

If preferred or more readily available, nectarines can be substituted for peaches - which are the same thing as nectarines but just with fuzz on the skin - or plums or apricots. One it is time to assemble, consider employing a helper, as this will be very fun for kids to assemble and customize, or use a taco holder to keep the shell upright. See below for a fun bonus tip on how to make your own taco holders to keep yourself from buying something extra you'll only use every now and again (unless you eat a lot of tacos).


Layer with the mushroom/nectarine mixture that feels like the texture of ground meat but even more satisfying, then the tomatoes, avocado, and top with Greek yogurt or sour cream for some cool tang on top - or assemble however is fun for you!

8 ounces portabello, baby bella, or button mushrooms

2 large nectarines

2 medium tomatoes

1 large avocado

1/2 cup Greek yogurt or sour cream
