Green Goddess Herb Spread

This take on a classic green goddess dip is packed with flavor and is so versatile. My absolute favorite application for this spread is to use it on a sandwich, such as turkey or veggie. It is great for parties and the best part is that you can mix and match herbs to your taste or to what you have a bit too much of in season.

For this version of the recipe, I used dill, mint, and parsley. However, I’ve also made it with basil for more of a pesto-like quality, without the dill when I didn’t have it handy, and once with dried mint in the winter when I was out of fresh herbs. All were good, but I like the dill-mint-parsley trifecta the best. Don’t be shy about using a lot of the herbs and testing out your own versions. Tarragon would also be a nice replacement.

One of the key parts of this recipe is to chop your herbs small. If you want to use an immersion blender or food processor you definitely can, but the recipe works with just manual chopping with a sharp knife! The greek yogurt or icelandic skyr yogurt as the base adds a tang that is reminiscent of mayo, but much healthier and has the benefit of being gut friendly, packed with probiotics.

This recipe is a great way to use up extra herbs, which can be great for sustainability if you have a bit too much of something. I recently found wild mint growing out of the foundation of my home - like a weed! I pulled it out and transplanted it into a raised garden bed and now have tons of mint in the spring and summer that keep coming back (unfortunately so does the one in my home’s cement, so I’ll keep on pulling). The parsley and dill I got from a CSA box (see the details here), but I also like to keep frozen parsley and dried dill on hand in case. This recipe is really easy - you basically just chop the herbs, mix them into the yogurt with some olive oil and lemon, and that’s it.
You can use this dip as the base for something like a chicken salad or chickpea salad, as a mayo replacement as a spread for a burger, or just as a dip to go with chips or crudités.
So simple! So versatile! Yum!

Ingredients
1 cup greek or icelandic yogurt
1 tbs olive oil
Juice of half a lemon
1 bunch parsley (approximately ¼ cup chopped and packed)
1 bunch dill (approximately ¼ cup chopped and packed)
2 sprigs of mint (approximately 2 tbs chopped and packed)
Optional: Crackers and sliced cucumber for dipping

Instructions
Measure the greek yogurt into a bowl.
Add the olive oil and lemon juice.
Finely chop the herbs and add to the bowl.
Mix thoroughly and serve.
